OUTLOOK - How can I set sent-by and return-to if using multi accounts? 1

My company was bought out and I now have two email addresses. I am required to use them independently and be able to send messages as if they were two entirely different domain but in fact, both email addresses are under a single account in our exchange server.

In other words, I have
SMTP:southbeach@newdomain.com
smtp:southbeach@olddomain.com

We changed the MX record for olddomain.com to point to newdomain.com - Messages sent to southbeach@olddomain.com do show in my inbox - Problem is, when I reply, I need it to go back as if was sent by southbeach@olddomain.com not @newdomain.com.

I was told this was a client side configuration (Exchange dude said so) - I am left with the $64,000 question:

How can I configure outlook so that I can mask my email address or choose which alias to use?

Assuming Outlook 2003:

From within a new message or a reply to a message click on View ->From Field so that the "From" field will show. You only need to do this once to display the "From" field.

Once the "From" field is displayed start typing in the email address that you want to use. After you've typed in each email address once then you should just have to type in the beginning of your email address and you'll get autocomplete options just like you do in the "To" field.

FYI.- It turns out that instead of View, I found it under Option (the drop down box).
