what is the proper way to load balance network on a server with multiple nics?

is it bridinging or something else?

after further research i found information on Load Aggrigate grouping (LAG) aka network trunking, but nothing explaining how to do it on a windows 2003 server

Its my understanding windows 2003 has no native ability to team nic's. you need to use nic's that support teaming and use the drivers provided by the nic manufacture.

Are you talking about combining 2 nics - just to increase bandwidth, or actual NLB?

If you want to combine NICs, Windows 2003 comes with the Intel ProSet, which from memory allows this to occur with the right Intel NICs.
 
It might be worth checking the server manufacturer's website for this. I know HP have their own load balancing software (I have used it, it used to be called CPQANS) but you need to check because sometimes they require specific configurations on the switch ports the servers are plugged into if you have more than one port on a switch (usually in a load balancing config, the switch port has to be configured for Fast EtherChannel - FEC)
