When using the I2050 softphone, I get a delay or when minimizing windows. Is there a way to correct that as minimzing or maximizing a window shouldn't affect bandwidth.

You are not affecting bandwidth, you are chewing up CPU cycles on the computer that is running the i2050. That can cause a slight delay.

Run task manager and performance monitor with the Kernel monitor enabled and you will see what I mean.

I don't think that's the issue as I checked in task manager when it's running or just minimizing another window and I don't even see a spike in CPU usuage. I get this on any PC running the soft phone.
