host multiple domains

We would like to consolidate all of our mail domains into a single mail server. We currently run exchange 5.5 and I assume this cannot be done with 5.5 but it is possible to do so with 2000 or 2003? The other mail is hosted on a LINUX server at our detroit location and hosts domains. We just need our mail to host 2 or 3. Can and how can this be done.
 
I am taking this one step further. I have two domains our main domain and a secondary. The main forwards it's e-mail through our provider to scrub for viruses (just incase inhouse misses something). But I can not do this with the secondary domain (would need to buy more services from that isp). I know I need to setup routing but what I tried didn't work (told me I needed to setup an smtp vsi). I tried making a new routing group and another smtp Virtual server. Maybe I'm close but how will the server know what domain to send out under? Or just ignore everything I tried and please point me in the correct direction.
