Disable protocol using the Linux firewall

Hi,

I got RH 7.3 with iptables (NAT) working fine. What can I use to block/disable certain protocols from going through the firewall (ie smb, ftp, icq, MSN messenger)? I know there is a lot of P2P software that change from default ports, so I rather disable the protocol.

Thanks for any advice.
