I recently set up my backup for exchange. I've been reading about restore jobs having to go to another server on another site or something. Does this mean that it's not possible to just delete a mailbox and restore it back from the tape to the original exchange server?

You can restore a mailbox to the original location without any hitch.
Restoring to a different server is just a fault tolerant measure.

If you don't do brick level backups (we don't) and want to recover a mailbox then you have to restore the EDB's to another server and recover the mail from that.
