Active Directory Upgrade from 2000 Ad to 2003 R2 AD

I have a Windows 2000 Active Directory with two DC. I just purchased a new server that has Windows 2003 R2 installed.

The Windows 2003 R2 Server will be replacing one of the existing Windows 2000 Servers both in Name and IP number.

Can I extend the windows 2000 Active Directory Schema to the Windows 2003 R2 Active Directory any time and then at a later day install the Windows 2003 r2 Active Directory?

Also I have been searching the internet for steps to replace a Windows 2000 Server with Active Directory with a new Windows 2003 R2 server with Active Directory. I found a few documents but I’ looking for any information that will help me with the upgrade process.
