Cannot configure 5.0 environment

While I love the new features in HS 5.0 (especially the dual editing windows), I cannot configure the workplace environment as easily as I could with v4.5. Here are my concerns:
All of the tab options in View/Resource Windows are clicked on but are grayed so they can not be turned off. Also, how do I add or subtract Quick Toolbars? The old right click method does not work. When I go to Settings then Delete Toolbar, an alert says "only for custom toolbars".
