Anyone have any suggestions for DNS scavenging, do's and don'ts?

We took over an existing windows environment and there are 2 DCs that are not cleaning out stale records as well as they do not match with each other. Time stamps on records do not change as expected either. The environment seems a mess of old implementations by various individuals and we want to make sure we do it the right way and do it once according to best practices.

What do we need to be very careful of in turning on Scavenging?

Nah, you should be fine.  Use the default of 7 days.  it will help you keep records clean.
